a chili day in december



Today i made Vegetarian Chili to eat for dinner as we watched the Gamecocks in the SEC Championship... it was a lot of work but well worth it!
i decided i would share my very own  recipe (minus one or two secret ingredients) !



1. 1 12 Oz. Bag MorningStar Meal Starters Sausage Style Recipe Crumbles
2. 2 12 Oz. Bags MorningStar Meal Starters Grillers Recipe Crumbles
3. 2 Large Sweet Onions Finely Chopped
4. 2 Large Green Bell Peppers Cleaned and Finely Chopped
5. 1 Jalapeno Cleaned and Diced Up Very Fine
6. 1 Can 4 OZ. Organic Chopped Green Chilies.
7. 2 Can 16 OZ. Organic Dark Red Kidney Beans Drained
8. 1 Can 16 Oz. Organic Light Red Kidney Beans Drained
9. 1 Can 16 Oz. Organic Black Eyed Peas Drained
10. 2 16 Oz. Organic Cans Whole Tomatoes Smashed
11. 1 16 Oz. Organic Can Crushed Tomatoes
12. 1 16 Oz. Organic Can Diced Tomatoes
13. 1 6 Oz. Organic Can Tomato Paste
14. 1 32 Oz. Carton Organic Low Sodium Vegetable Broth
15. 1 Cup Heinz Chili Sauce
16. 2 Bottles Of Dark Beer
17. 3 Tablespoons Pompeian OlivExtra Plus Oil- with added Omega-3’s
18. 3 Tablespoons Chili Powder
19. 1 ½ Tablespoons Ground Cayenne Pepper
20. 3 Cloves Fresh Minced Garlic.
21. 1 Tablespoon Cumin Powder
22. 1 Tablespoon Salt
23. ¼ Cup Brown Sugar
24. 1 ½ Teaspoon Unsweetened Cocoa
25. 1 teaspoon Oregano
26. 1 teaspoon Coriander
27. 1 teaspoon Ground Mustard



In a large skillet with half the oil cook Crumbles until defrosted and a “meat-like” texture.
 In a large stockpot with last half oil sauté onions, jalapenos, peppers and Chile's until tender.
Add Crumbles to onion and pepper mixture.
Add in tomatoes, liquid and spices (everything but the beans and paste).
Cook over low to medium heat keeping just below a boil for at least 5 
(preferably 6-7) hours, Stirring occasionally.
Add in beans and tomato paste.  Cook for at least 1 more hour.
Top with sour cream, shredded cheddar, green onions and ENJOY with a cold beer!
